Jester King Brewery (Austin, Texas) bottled their first 100% spontaneously fermented beer this week. The unnamed beer should release in late 2016.
Back in 2013, the brewery used their coolship for the first time (a shallow tub where the wort cools). Jester King let it ferment using the native wild organisms in the Texas air.
That brings us back to this week. Nearly three years into the project, the brewery has finally blended and bottled their first spontaneous beer. Jester King estimates it will take anywhere from 6-9 months to re-ferment in the bottle prior to release.
The yet-to-be named beer now rests in 750 and 375 milliliter bottles, as well as kegs.
